The Pigeon Pea (Frijol de Palo or Gandul in Spanish) is a brown colored legume. It is mostly cultivated in northern Peru in the departments of Lambayeque and Piura. Pigeon Peas are known for its high protein content (up to 26%).

Pigeon Peas are consumed directly as grains and are also commercialized as canned and frozen goods. In these cases, it has to be processed before its ripe (while it’s still green).

Availability: Green pod beans in May, dry grain in August
